Aunt Sue’s Zucchini Bread With Pineapple & Walnuts

1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 egg
1/4 cup cooking oil
1 cup finely shredded peeled zucchini OR yellow squash
1 8-1/4 oz. can crushed pineapple, drained
1/4 teaspoon finely shredded lemon peel
1/2 cup chopped walnuts, optional
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup sugar
1/4 teaspoon salt

DIRECTIONS:  Combine flour, cinnamon, baking soda, salt, baking powder & nutmeg.  In another bowl, combine sugar, zucchini, oil, pineapple, egg & lemon peel; mix well.  Add flour mixture; stir until just combined.  Add walnuts if using.  Pour batter into greased 8x4x2-inch loaf pan.  Bake at 350F for 55-60 minutes.  ENJOY!!
